Why Harvey turn against Gordon and batman in the dark knight movie?

Because they saved him instead of Rachel. The Joker had told Batman that rachel was in one and Dent in another building. Batman went to save rachel and found that the Joker had switched them so Dent and Batman listened to Rachel die. Her death and his scarring pushed Dent over the edge.
